馬友除了是醃製鹹魚的上佳品種,新鮮的馬友亦肉質肥美。6號為肥媽找來一條斤両十足的新鮮馬友,由她炮製一魚四吃!阿媽把果皮切絲並釀進魚中,做出「薑蔥果皮蒸馬友腩」,魚肉滲出陣陣清香。她又參照日式煮法,奉上「鹽燒馬友魚骹」。「乾煎馬友尾」則是佐飯佳餚,惹味醬汁怎樣調製?還有採用魚頭、魚骨煮成的靚湯,鮮甜滋味。處理魚鮮,下酒或其他調味料,未必能完全辟除腥味。肥媽提到這與清洗過程中,沒徹底清理魚的某處有關?
